Coconut Oil

Coconut oil is high in saturated fats, primarily medium-chain triglycerides (MCTs), including lauric acid, caprylic acid, and capric acid. It also contains small amounts of vitamins E and K, as well as antioxidants. While coconut oil was once demonized for its saturated fat content, recent research suggests that the type of saturated fats in coconut oil may have different metabolic effects compared to those in animal fats.
